Shrimp Heroes

Shrimp Heroes

(makes 4 servings)

1pound cooked shrimp (if large, cut into bite size pieces)
1/2cup (60 g) finely diced celery
1/4cup (40 g) finely minced red onion
1/3cup (85 g) fat free mayonnaise
1tablespoon (4 g) minced fresh tarragon or 1 teaspoon (5 ml) crushed dried
4hero rolls
1cup (108 g) shredded lettuce
2medium tomatoes, thinly sliced
1medium green bell pepper, seeded and thinly sliced crosswise into rings

  1. In a large bowl, combine shrimp, celery, red onion, mayonnaise, and tarragon. Mix well.
  2. Cut a lengthwise V-shaped section out of the top of the hero roll and set aside. Line the bottom of the roll with some of the shredded lettuce, tomato slices, and bell pepper slices. Top each with 1/4 of the shrimp mixture. Replace the top of the roll and cut the sandwich in half.
  3. Serve immediately.

Jicama Slaw

(makes 4 servings)

1small jicama, peeled and julienned, about 4 cups (520 g)
1medium carrot, peeled and shredded
1jalapeņo chile pepper, seeded and finely minced
3tablespoons (45 ml) fresh lime juice
1tablespoon (15 ml) fresh orange juice
2tablespoons (8 g) finely minced cilantro

  1. Combine all ingredients, tossing to mix well.
  2. Serve cold.
Per serving:63 calories (0% calories from fat), 0 total fat (0 saturated fat), 15 g carbohydrates, 7 g dietary fiber, 0 cholesterol, 13 mg sodium

Strawberries and Raspberries in Red Wine

(makes 4 servings)

3cups (448 g) sliced fresh strawberries
2cups (290 g) fresh raspberries
6tablespoons (90 ml) red wine
2tablespoons (30 ml) fresh lemon juice
ground cinnamon

  1. In a medium bowl, lightly toss the strawberries and raspberries with the red wine and lemon juice.
  2. Lightly sprinkle with cinnamon and divide into 4 dessert bowls. Chill until ready to serve.
