Shrimp Heroes

Shrimp Heroes
(makes 4 servings)
| 1 | pound cooked shrimp (if large, cut into bite size pieces) |
| 1/2 | cup (60 g) finely diced celery |
| 1/4 | cup (40 g) finely minced red onion |
| 1/3 | cup (85 g) fat free mayonnaise |
| 1 | tablespoon (4 g) minced fresh tarragon or 1 teaspoon (5 ml) crushed dried |
| 4 | hero rolls |
| 1 | cup (108 g) shredded lettuce |
| 2 | medium tomatoes, thinly sliced |
| 1 | medium green bell pepper, seeded and thinly sliced crosswise into rings |
- In a large bowl, combine shrimp, celery, red onion, mayonnaise, and tarragon. Mix well.
- Cut a lengthwise V-shaped section out of the top of the hero roll and set aside. Line the bottom of the roll with some of the shredded lettuce, tomato slices, and bell pepper slices. Top each with 1/4 of the shrimp mixture. Replace the top of the roll and cut the sandwich in half.
- Serve immediately.

Jicama Slaw
(makes 4 servings)
| 1 | small jicama, peeled and julienned, about 4 cups (520 g) |
| 1 | medium carrot, peeled and shredded |
| 1 | jalapeņo chile pepper, seeded and finely minced |
| 3 | tablespoons (45 ml) fresh lime juice |
| 1 | tablespoon (15 ml) fresh orange juice |
| 2 | tablespoons (8 g) finely minced cilantro |
- Combine all ingredients, tossing to mix well.
- Serve cold.

Strawberries and Raspberries in Red Wine
(makes 4 servings)
| 3 | cups (448 g) sliced fresh strawberries |
| 2 | cups (290 g) fresh raspberries |
| 6 | tablespoons (90 ml) red wine |
| 2 | tablespoons (30 ml) fresh lemon juice |
| ground cinnamon |
- In a medium bowl, lightly toss the strawberries and raspberries with the red wine and lemon juice.
- Lightly sprinkle with cinnamon and divide into 4 dessert bowls. Chill until ready to serve.
